Pebble ice at home

How to get chewable pebble (nugget) ice at home without a machine, and why it makes dirty sodas better.

Why it matters

Small, porous ice chills soda fast, keeps cream suspended and is fun to chew once it's soaked in syrup.

Without a machine

Wrap ice cubes in a towel inside a zip bag, crush with a rolling pin or mallet until pea-sized, then refreeze briefly on a tray. Sift out the powder for clearer drinks.

Buy it

Some grocery stores and fast-food restaurants sell bags of nugget ice. Countertop nugget-ice makers exist if you make drinks daily.

Step by step

  1. 1Fill a zip bag halfway with ice cubes and wrap it in a kitchen towel.
  2. 2Crush with a rolling pin until the pieces are pea-sized.
  3. 3Spread the pieces on a tray and refreeze for 10 minutes.
  4. 4Fill your cup to the top before pouring the soda.
